Like most people, us gajamos girls love surfing the Internet. When we come across a site that catches our eyes, we immediately share it with one another, oo-ing and aa-ing, laughing or crying together over this shared discovery. Links to great, easy, mouth-watering recipes are no-brainers.
We came across this Buzzfeed article (probably our fav site) and droooooled for hours, then resolved to try at least one of the recipes for a wine night. When a group of our friends got together to celebrate Valentine’s Day, we knew it would be the perfect time to try one of these delicious recipes and showcase our “cooking” skills. Here’s our step-by-step photo how-to for the Baked Brie with Blackberry Compote (we added puff pastry to this recipe, thanks to Freutcake!)
1 15-ounce wheel of Brie cheese
1/4 cup of water
2 tablespoons of sugar
2 1/4 teaspoons of lemon juice
6 ounces of blackberries
1 sheet of Puff Pastry (make sure to buy the sheets)
Preheat the oven to 400 degrees F. Place the wheel of Brie cheese onto the Puff Pastry.
Fold the puff pastry sheet over the Brie cheese. Take off the excess pastry pieces.
Take the egg and whisk with a fork. Brush the edges of the puff pastry with the whisked egg. Place onto a covered baking sheet seam-side down. Then, place in the oven for 25 minutes or until golden brown.
Heat the water, sugar, and lemon juice over medium heat. Stir until sugar dissolves and mixture is boiling.
Pour this mixture, along with the blackberries, into a blender and blend until smooth.
Take the brie carefully out of the oven. Let cool (around 10 minutes, not too long or else the cheese inside will harden). Pour blended mixture onto the baked brie and serve with crackers or bread!
